French Onion Soup Mix
Ingredients
- 3 tbsp dried onion flakes
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried parsley flakes
- 1 tsp Herbamare seasoning (or sub ½ tsp celery salt and ½ tsp sea salt)
- ½ tsp turmeric
- ½ tsp ground black pepper
Instructions
Add all the ingredients to a jar and shake to mix.
Use it in:
– French Onion Dip – mix 1-2 tablespoons into a tub of sour cream
– Apricot Chicken
– Add to rissoles/meatballs
– Add to soups/casseroles for a flavour boost
– Make a cream sauce to serve with steak or chicken by adding pure cream and a tablespoon of soup mix to the pan juices. Even better if you cook some mushrooms first!
– Mix with cream to add extra flavour to a potato bake.
Curry Spice Mix
Ingredients
- 3 tsp turmeric
- 3 tsp ground cumin
- 3 tsp ground coriander
- 2 tsp garam masala
- ½ tsp black pepper
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp ground chili (more or less to taste)
Instructions
Add all the ingredients to a jar and shake to mix.
Use it in:
– A simple curry (soften some onion, garlic and ginger in ghee in a pan, then add a tablespoon or two of curry mix and toast until fragrant before adding your other ingredients such as meat or lentils, tinned tomatoes, vegetables, coconut cream, etc)
– Curry Puff Pies
– Curried vegetable burgers or patties
– Add to vegetable fritters for a spicy twist
Mexican Spice Mix
Ingredients
- 2 tsp sea salt
- 1 tsp rapadura sugar
- 2 tsp paprika
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1/2 tsp ground chili (optional for kids)
- 1 tsp oregano
- 1 tsp ground black pepper
- 1 tsp dried onion powder
- 1 tsp dried garlic powder
Instructions
Add all the ingredients to a jar and shake to mix.
Use it in:
– Mexi-Beans
– Taco Mince – brown chopped onion and mince, add 2 tbsp seasoning mix and 1 tin diced tomatoes. Simmer to reduce and thicken, then serve in tacos with your favourite fillings.
– Chilli con Carne – as for taco mince, but add a cup of beef broth, another tin of tomatoes and a tin or two of drained kidney beans.
– Fajitas – cook onions and capsicums in a pan, then add strips of beef or chicken and stir-fry until browned. Add 2 tbsp seasoning mix and cook until fragrant, then serve in tortillas with your favourite fillings.
