Avocado Salsa Lunch
- • 1 avocado
- • 1/4 red onion (very thinly sliced)
- • Juice of half a lemon
- • salt and pepper (to season)
- Just smash it all together
- Today I added it to 100% brown rice Rice Crackers and sliced a tomato on top (I get the rice cakes from Coles)
Really the opportunities are endless – you could add feta/tuna/chicken to the rice cakes if you love cheese or want some protein.
