- 3 slices of bacon, chopped
- 1 avocado, flesh removed and diced
- 2 large tomatos, diced
- 100g feta, cubed
- 2 spring onions, thinly sliced (optional)
- Small handful basil leaves
- Juice of half a lemon
- Salt and pepper
- Olive oil
1. Cook bacon in a frying pan over medium-high heat until cooked to your liking. Add the bacon to a mixing bowl and combine all other ingredients until mixed through.
2. Sprinkle a little salt and pepper and drizzle with olive oil before serving on top of sourdough.
